Thai Crab Noodle Salad

Amount       Ingredients
1 can            Sea Fare or Miller's Select Crab Meat
8 oz              Thin spaghetti or soba noodles
1/2 cup        Thinly sliced red bell pepper
1/2 cup        Chopped cashew nuts
3 tbsp          Sesame oil
1                   Clove garlic, minced
2 tbsp          Soy sauce
3 tbsp          Red wine vinegar
1/3 cup        Chopped cilantro
1/3 cup        Chopped green onion
1 tsp             Dry red pepper flakes (optional)
1 tsp             Ginger (optional)
3 cups          Fresh lettuce or arugula leaves

Cook the noodles according to package directions
and rinse immediately under cold running water.
Stir-fry the bell pepper and cashews in one
tablespoon of sesame oil for about three minutes;
add garlic and cook another 30 seconds. Whisk
remaining two tablespoons sesame oil, soy
sauce, and vinegar. Place all ingredients in a
large bowl and toss gently to distribute the
dressing. Serve cold on lettuce leaves, or try
serving hot.
