Crab Louis

 

Serves 2 as a main course or 4 side salads. 
 
1 can MILLER’S SELECT or SEA FARE JUMBO LUMP CRAB MEAT (drained)
2 hard-boiled eggs (quartered or grated)
1 avocado, peeled and sliced
1 or 2 tomatoes, cut in wedges
shredded lettuce or spring greens
 
Dressing:
1/2 cup mayonnaise
1tbsp. chili sauce or ketchup
2 tsp. bell pepper, finely chopped
2 tsp. fresh lemon juice
Dash Worcestershire sauce
Dash Tabasco sauce
 
Drain crab meat and set aside. Combine ingredients for dressing and chill until ready to use. Arrange lettuce on salad plates. Place tomato wedges and avocado slices around edge of lettuce and place crab in center; garnish with egg. Spoon dressing over salad.
